Our Process
Saint Rhum is Rhum Agricole - French for agricultural rum - which can only be made from the fresh-pressed juice of sugarcane. Each batch is distilled within a day of harvest, and so maintains a distinct, fresh taste of its local provenance. Our home in Marie-Galante is renown for it's rich terroir.

Harvest
When we say, "Farm to Bottle," we mean it. Our distillery IS the farm. Four kinds of cane are used: red, white, blue, and gray. All are grown on our estate. All sugarcane is hand cut and brought to the distillery by ox-drawn carts.

Extraction & Fermentation
At the distillery, the sugarcane is crushed and the fresh juice is extracted within 24 hours of harvest. A 72 hour fermentation yields a vin de canne at 5% alcohol by volume.

Distillation
Distilled with an authentic copper creole column still salvaged from a shipwreck 100 years ago, the rum is then placed in open-top wooden foudres for 10 to 15 days to rest. Local demineralized water is added to bring it down to 47% abv, the perfect strength.

Bottling & Packaging
All Saint Rhum bottles are packaged by hand. We make our rum in small batches, because true quality takes time and focus. We're not trying to make a million cases. We're trying to make the best white rhum in the world.

The Ti' Punch
A French West Indies staple, the Ti' Punch can be dressed up or dressed down based on your vibe and drinking location. Make it refined with a lime disc, or muddle it up with lime wedges and honey.
- 2 oz Saint Rhum
- Lime Wheel
- Honey or Raw Sugar
Stir, swizzle, muddle, or mix the lime juice, lime wheel, and honey. Add Saint Rhum on top. Ice is optional, but generally frowned upon.

Inhale and Sip
Nose: Fresh sugarcane juice, grass clippings, and green banana. Hints of lime zest and white pepper. Slightly earthy with a touch of olive brine.
Taste: Vibrant and grassy with a pronounced sugarcane sweetness. Vegetal notes of bell pepper and cucumber. Sharp citrus flavors of lemon and grapefruit pith. Underlying minerality reminiscent of wet stones.
Finish: Long and warming. Persistent sugar cane sweetness balanced by peppery spice. Lingering notes of green herbs and a subtle saltiness. Leaves a clean, slightly drying sensation on the palate.
